Hungarian Walnut Roll (Diós Beigli) Recipe
Ingredients
For the Dough
- 500 g all-purpose flour
- 200 g unsalted butter, softened
- 50 g granulated sugar
- 20 g fresh yeast or 7 g active dry yeast
- 2 egg yolks
- 120 ml warm milk
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- Zest of 1 lemon
For the Walnut Filling
- 300 g finely ground walnuts
- 150 g granulated sugar
- 100 ml milk
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- ½ teaspoon ground cinnamon
- 50 g raisins, optional
For the Egg Wash
- 1 egg yolk
- 1 tablespoon milk
- 1 egg white, lightly beaten
Instructions
1. Prepare the Dough
In a small bowl, combine the warm milk with the yeast and a teaspoon of sugar. Let it stand for about 5–10 minutes until slightly foamy.
In a large mixing bowl, combine the flour, sugar, and salt. Add the softened butter, egg yolks, vanilla, and lemon zest. Pour in the yeast mixture and knead until a smooth, soft dough forms.
Shape the dough into a ball, cover it, and let it rest in the refrigerator for about 30–45 minutes.
2. Make the Walnut Filling
Place the ground walnuts, sugar, milk, honey, lemon zest, vanilla, and cinnamon in a saucepan.
Cook over low heat for several minutes, stirring continuously, until the mixture becomes thick and spreadable. Stir in the raisins if using.
Allow the filling to cool completely before assembling the rolls.
3. Roll Out the Dough
Divide the chilled dough into two equal portions.
Roll each portion into a thin rectangle, approximately 25 × 35 cm.
Spread half of the walnut filling evenly over each rectangle, leaving a small border around the edges.
4. Shape the Rolls
Fold the edges slightly inward and carefully roll each rectangle into a tight log.
Place the rolls seam-side down on a baking tray lined with parchment paper.
Prick the tops gently with a fork or skewer in several places. This helps steam escape during baking and reduces the chance of the pastry splitting.
5. Prepare the Traditional Finish
Brush the rolls with beaten egg yolk and allow them to rest for about 15–20 minutes.
Then brush them lightly with beaten egg white. Allow the surface to dry slightly before baking. This traditional method helps create the characteristic glossy, lightly marbled appearance of Hungarian beigli.
6. Bake
Preheat the oven to 180°C (350°F).
Bake the walnut rolls for approximately 30–35 minutes, or until the pastry is beautifully golden brown.
Remove from the oven and allow the rolls to cool completely before slicing.
How to Serve Hungarian Walnut Roll
Slice the cooled beigli into approximately 1–2 cm thick pieces. Serve at room temperature with coffee, tea, or hot chocolate.
The walnut filling is naturally rich and aromatic, while the delicate pastry provides a pleasant contrast. For a festive presentation, dust the cooled slices lightly with powdered sugar.
Expert Tips for Perfect Diós Beigli
- Keep the filling thick: A watery filling can cause the roll to crack or become soggy.
- Cool the filling completely: Never spread hot walnut filling over the dough.
- Do not overfill: A moderate, even layer creates the classic spiral and makes rolling easier.
- Prick the rolls: Small holes allow steam to escape during baking.
- Avoid overbaking: The pastry should be golden brown but still tender.
- Cool before slicing: Cutting the roll while hot can cause the filling to crumble.
Frequently Asked Questions
What is Diós Beigli?
Diós Beigli is a traditional Hungarian rolled pastry filled with sweetened walnuts. It is especially popular during Christmas and other festive occasions.
Can I prepare the beigli in advance?
Yes. Hungarian walnut roll keeps well for several days when stored in an airtight container at room temperature.
Can I use other fillings?
Absolutely. A very popular variation is mákos beigli, which is made with a sweet poppy-seed filling instead of walnuts.
Why does my beigli crack?
Cracking can happen if the filling is too wet, the dough is rolled too tightly, or steam cannot escape during baking. Pricking the surface before baking helps prevent excessive cracking.
