Hungarian Palacsinta (Hungarian Crêpes with Jam)
Ingredients
- 2 cups (250 g) all-purpose flour
- 2 large eggs
- 2 cups (480 ml) milk
- 1 cup (240 ml) sparkling water
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 tablespoons vegetable oil
- Butter or oil, for cooking
- Apricot or strawberry jam, for filling
- Powdered sugar, for serving
Instructions
- Make the batter: In a large bowl, whisk together the eggs, milk, sparkling water, sugar, vanilla, and salt.
- Gradually add the flour, whisking until the batter is smooth and fairly thin. Stir in the vegetable oil.
- Let the batter rest for 15–20 minutes.
- Cook the crêpes: Heat a lightly oiled non-stick frying pan over medium heat. Pour in a small ladleful of batter and quickly swirl the pan to create a thin, even layer.
- Cook for about 1–2 minutes, until the edges begin to lift and the bottom is lightly golden. Flip and cook the other side for about 30–60 seconds.
- Repeat with the remaining batter, lightly greasing the pan when necessary.
- Fill: Spread each crêpe with apricot, strawberry, or another favorite fruit jam. Roll tightly into a cylinder.
- Arrange the rolled crêpes on a serving plate and dust generously with powdered sugar.
Serving
Serve the Hungarian palacsinta warm or at room temperature with extra jam and powdered sugar. It makes a simple, traditional Hungarian dessert that is perfect for breakfast, afternoon coffee, or a sweet family treat.
