🇭🇺 Hungarian Baked Sausage Recipe

Ingredients

  • 1 kg Hungarian-style pork sausages or fresh kolbász
  • 2 tablespoons pork lard or vegetable oil
  • 2–3 cloves garlic, lightly crushed
  • 1 teaspoon sweet Hungarian paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt, if needed
  • 100 ml water
  • 1 medium onion, sliced
  • 1 teaspoon caraway seeds (optional)

For Serving

  • Boiled or roasted potatoes
  • Hungarian pickles
  • Sauerkraut
  • Fresh crusty bread
  • Hungarian mustard

Instructions

1. Prepare the Sausages

Preheat your oven to 190°C (375°F). Arrange the sausages in a baking dish. If they are very thick, prick them lightly in a few places with a fork to help prevent them from splitting during cooking.

2. Add the Aromatics

Scatter the sliced onion and crushed garlic around the sausages. Add the lard or oil, paprika, black pepper, and caraway seeds if using.

3. Add a Little Water

Pour approximately 100 ml of water into the bottom of the baking dish. This creates gentle steam during the first part of cooking and helps keep the sausages juicy.

4. Bake

Cover the dish loosely with aluminum foil and bake for approximately 25–30 minutes.

Remove the foil and continue baking for another 20–25 minutes, turning the sausages occasionally, until they are deeply golden brown and cooked through.

For an especially crisp exterior, increase the oven temperature to 210°C (410°F) during the final 5–10 minutes.

5. Rest and Serve

Remove the sausages from the oven and allow them to rest for 5 minutes before serving. Spoon some of the flavorful cooking juices over the sausages.

Serve hot with roasted potatoes, sauerkraut, pickles, mustard, and fresh Hungarian-style bread.

🍽️ Recipe Notes

  • Use fresh Hungarian sausage for the best texture and flavor.
  • Pork lard gives the dish a particularly traditional Hungarian character.
  • Do not overcrowd the baking dish; the sausages should have enough space to brown properly.
  • If using a sausage that is already fully cooked, reduce the baking time and focus on heating and browning it.
  • Cooking times can vary depending on the thickness and type of sausage. For raw pork sausage, make sure it reaches a safe internal temperature before serving.
