500 ml whole milk


4 egg yolks

250 ml heavy whipping cream


2 tablespoons powdered sugar


½ teaspoon vanilla extract


Whole or chopped walnuts, for decoration

1. Prepare the Walnut Sponge


Preheat the oven to 180°C (350°F).


Separate the eggs. Beat the egg whites with a pinch of salt until soft peaks form. Gradually add half of the sugar and continue beating until glossy and firm.


In another bowl, beat the egg yolks with the remaining sugar and vanilla until pale and creamy.


Gently fold the ground walnuts, flour, and baking powder into the egg-yolk mixture.


Carefully fold in the beaten egg whites in several additions. Avoid overmixing so the batter remains light and airy.


2. Bake the Layers


Spread the batter evenly onto a parchment-lined baking tray.

Whip the chilled heavy cream with powdered sugar and vanilla until firm.
