🇭🇺 Hungarian Krémes Recipe

Total Time: 5 hours

Servings: 12 pieces

Ingredients

For the Pastry Layers

2 sheets of puff pastry

A little flour, for dusting

Powdered sugar, for decoration

For the Vanilla Custard

1 liter whole milk

6 large egg yolks

150 g granulated sugar

80 g cornstarch

2 teaspoons vanilla extract

1 packet vanilla sugar, optional

200 ml heavy cream

A pinch of salt

Instructions

1. Prepare the Pastry

Preheat the oven to 200°C (400°F).

Place the puff pastry sheets on baking trays lined with parchment paper. Prick the pastry lightly with a fork to prevent it from puffing too much.

Bake until beautifully golden and crisp, approximately 15–20 minutes. Allow the pastry to cool completely.

For easier serving, cut one pastry sheet into individual squares before assembling the cake.

2. Make the Vanilla Custard

Heat the milk in a saucepan until hot but not boiling.

In a separate bowl, whisk together the egg yolks, sugar, cornstarch, vanilla, and salt until smooth.

Slowly pour some of the hot milk into the egg mixture while whisking continuously. Return everything to the saucepan and cook over medium heat, stirring constantly.

Continue cooking until the mixture becomes very thick and creamy.

Remove from the heat and cover the surface directly with plastic wrap. Allow the custard to cool until slightly warm.

3. Add the Whipped Cream

Whip the heavy cream until soft peaks form.

Once the custard has cooled, gently fold the whipped cream into it. This creates a lighter, silkier filling while keeping the classic vanilla flavor.

4. Assemble the Krémes

Place the first pastry layer in a rectangular baking dish.

Spread the vanilla cream evenly over the pastry and smooth the surface with a spatula.

Place the second pastry layer on top. For neat slices, use the pastry sheet that was pre-cut into squares.

Refrigerate the cake for at least 4 hours, preferably overnight, so the cream can set properly.

5. Finish and Serve

Just before serving, dust the top generously with powdered sugar.

Use a sharp knife to cut the cake into neat rectangular portions and serve chilled.

Expert Tips for Perfect Hungarian Krémes

Use full-fat milk for the richest custard.

Stir the custard constantly while cooking to prevent lumps.

Chill the dessert thoroughly before slicing.

Pre-cutting the top pastry makes serving much easier and prevents the cream from being squeezed out.

For the best texture, prepare the dessert a day ahead and let it rest overnight.

Why You’ll Love This Hungarian Dessert

The beauty of Krémes is its contrast of textures: crisp, delicate pastry meets luxurious vanilla cream. The powdered sugar on top adds just the right amount of sweetness and gives the dessert its traditional Hungarian appearance.

This is a wonderful recipe for anyone who enjoys classic European pastries and elegant homemade desserts.
