Ingredients

For the Pastry

  • 500 g all-purpose flour
  • 250 g cold unsalted butter
  • 2 egg yolks
  • 80 g powdered sugar
  • 120 ml sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 pinch of salt

For the Vanilla Cream Filling

  • 500 ml milk
  • 2 egg yolks
  • 80 g granulated sugar
  • 40 g cornstarch
  • 1 teaspoon vanilla extract
  • 30 g butter
  • 100 ml heavy cream, whipped

For Finishing

  • 1 egg, beaten, for brushing
  • Powdered sugar, for dusting

Instructions

1. Prepare the Pastry

In a large bowl, combine the flour, powdered sugar, baking powder, and salt.

Add the cold butter cut into small pieces. Rub the butter into the flour mixture with your fingertips until it resembles fine crumbs.

Add the egg yolks, sour cream, and vanilla. Mix until a soft dough forms.

Do not overwork the dough. Wrap it and refrigerate for 30 minutes.

2. Prepare the Vanilla Cream

Pour the milk into a saucepan and heat gently.

In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and a small amount of the warm milk until smooth.

Slowly add the mixture to the saucepan while whisking continuously.

Cook over medium-low heat until the cream becomes thick and smooth.

Remove from the heat and stir in the vanilla and butter.

Cover the surface directly with plastic wrap and allow the cream to cool completely.

Once cold, gently fold in the whipped cream to create a lighter, smoother filling.

3. Roll Out the Dough

Preheat the oven to 180°C (350°F).

Roll the chilled dough out on a lightly floured surface to approximately 3–4 mm thick.

Cut the dough into elongated rectangles or strips suitable for forming the pastry rolls.

4. Shape the Rolls

Wrap each strip of dough around a lightly greased pastry tube or metal cannoli-style mold, slightly overlapping the edges.

Place the rolls seam-side down on a parchment-lined baking tray.

Brush lightly with beaten egg.

5. Bake

Bake for approximately 18–22 minutes, or until the pastry is beautifully golden and crisp.

Remove from the oven and allow the rolls to cool for several minutes.

Carefully remove the pastry from the molds and let them cool completely.

6. Fill and Finish

Transfer the cooled vanilla cream into a piping bag.

Pipe the cream generously into both ends of each pastry roll.

Arrange the filled rolls on a serving plate and dust generously with powdered sugar.

Expert Tips for Perfect Hungarian Pastry Rolls

Keep the butter cold: Cold butter helps create a delicate, flaky pastry.

Do not overwork the dough: Excessive mixing can make the pastry tough.

Cool the filling completely: Warm cream can soften the pastry and make the rolls difficult to fill.

Fill just before serving: For the best texture, fill the pastry shortly before serving.

Use plenty of powdered sugar: The snowy finish adds sweetness and gives these pastries their classic festive appearance.

Variations

Lemon Vanilla Cream

Add 1 teaspoon of finely grated lemon zest to the cooled vanilla cream for a fresh citrus flavor.

Apricot Version

Spread a very thin layer of apricot jam inside the pastry before adding the vanilla cream.

Walnut Cream

Replace part of the vanilla filling with finely ground toasted walnuts for a richer Hungarian-inspired variation.

How to Store

Unfilled pastry rolls can be stored in an airtight container at room temperature for up to 3 days.

Once filled with cream, refrigerate them and consume within 1–2 days. For the best texture, allow refrigerated pastries to sit at room temperature for about 10 minutes before serving.

Frequently Asked Questions

Can I prepare the pastry in advance?

Yes. The dough can be prepared a day ahead and kept refrigerated. Allow it to sit at room temperature for a few minutes before rolling.

Can I use store-bought puff pastry?

Yes, if you want a quicker version. However, homemade pastry gives these rolls a more traditional homemade character.

Can I use custard instead of vanilla cream?

Absolutely. A thick vanilla custard works particularly well and creates a richer filling.

Why did my pastry lose its shape?

Make sure the dough is properly chilled and that the strips are wrapped firmly around the molds. Avoid making the pastry too thin.
