  • 500–700 ml water or stock

How to Make Hungarian Stuffed Cabbage Rolls

1. Prepare the Cabbage

Bring a large pot of salted water to a boil.

Carefully remove the outer leaves from the cabbage and place the head into the boiling water. Cook for several minutes, removing the softened leaves one at a time with tongs.

Continue until you have enough large, flexible leaves for the rolls.

Allow the leaves to cool. Trim away the thick central vein if necessary so they are easier to roll.

2. Prepare the Filling

In a large bowl, combine the ground pork, uncooked rice, finely chopped onion, garlic, egg, Hungarian paprika, salt, black pepper, and optional caraway seeds.

Mix everything thoroughly until well combined.

Tip: Do not overfill the cabbage leaves because the rice will expand during cooking.

3. Roll the Cabbage

Place a cabbage leaf on a clean work surface.

Add a portion of the meat mixture near the bottom of the leaf. Fold the sides inward, then roll the cabbage firmly into a neat parcel.

Repeat with the remaining cabbage leaves and filling.

4. Prepare the Pot

Heat the lard or oil in a large, heavy-bottomed pot.

Add some of the sauerkraut to the bottom of the pot. Arrange the cabbage rolls tightly on top.

Cover the rolls with the remaining sauerkraut.

5. Make the Paprika-Tomato Sauce

Mix the crushed tomatoes, tomato paste, Hungarian paprika, water or stock, bay leaves, salt, and pepper.

Pour the sauce over the cabbage rolls. The liquid should come approximately halfway to two-thirds up the rolls.

6. Slowly Cook

Bring everything to a gentle simmer.

Cover the pot and cook over low heat for approximately 1½–2 hours, until the cabbage is tender, the rice is cooked, and the meat is completely done.

Avoid vigorous boiling, as it can cause the cabbage rolls to break apart.

7. Serve

Carefully transfer the cabbage rolls to serving plates.

Spoon some of the sauerkraut and paprika-tomato sauce over the top and serve with a generous spoonful of sour cream.

For a truly traditional Hungarian experience, enjoy the dish with fresh crusty bread.

⭐ Tips for Perfect Hungarian Cabbage Rolls

  • Use sweet Hungarian paprika for authentic flavor.
  • Keep the rolls snug in the pot so they don't unravel during cooking.
  • Don't overfill the cabbage leaves—the rice needs room to expand.
  • Slow cooking gives the cabbage and meat time to develop a rich flavor.
  • Töltött Káposzta often tastes even better the next day, after the flavors have had time to develop.
  • Serve with plenty of sour cream for a classic Hungarian finish.

Can I Make Hungarian Stuffed Cabbage Ahead of Time?

Absolutely. This dish is particularly well suited to preparing ahead.

After cooking, allow the cabbage rolls to cool and refrigerate them in their sauce. Reheat gently on the stovetop or in the oven before serving.

They can also be frozen in portions for convenient future meals.
