🥞 Hungarian Ham & Cheese Pancakes
Ingredients
For the Pancakes
- 2 cups (250 g) all-purpose flour
- 2 large eggs
- 2 cups (480 ml) milk
- ½ cup (120 ml) sparkling water
- ¼ teaspoon salt
- 1 tablespoon vegetable oil
- Extra oil or butter for frying
For the Filling
- 200 g sliced cooked ham
- 150–200 g grated cheese, such as Gouda, Edam, or Emmental
- 150 g sour cream
- 1 tablespoon cream cheese, optional
- A pinch of black pepper
- Chopped parsley, optional
Instructions
1. Prepare the Pancake Batter
In a large bowl, whisk together the eggs, milk, and salt. Gradually add the flour, whisking continuously until you have a smooth batter without lumps.
Add the sparkling water and vegetable oil, then mix well. Let the batter rest for about 15–20 minutes.
2. Cook the Pancakes
Heat a lightly oiled non-stick frying pan over medium heat. Pour in a small ladleful of batter and quickly swirl the pan to create a thin, even pancake.
Cook for about 1–2 minutes, until the underside is golden. Flip and cook the other side for another 30–60 seconds.
Repeat with the remaining batter.
3. Add the Filling
Spread a thin layer of sour cream or cream cheese over each pancake. Place a slice of ham on top and sprinkle generously with grated cheese.
Season lightly with black pepper and add a little chopped parsley if desired.
4. Fold the Pancakes
Fold each pancake in half and then fold it again into a neat half-moon or triangular shape.
5. Toast Until Golden
Place the filled pancakes back into a lightly buttered or oiled pan. Cook over medium-low heat for a few minutes on each side, until the cheese melts and the outside becomes beautifully golden and crisp.
Serving Suggestions

- Sour cream
- Fresh parsley or chives
- A simple cucumber salad
- Pickled vegetables
- Fresh tomatoes
- A light green salad
💡 Tips for Perfect Hungarian Pancakes
- Let the batter rest: This helps produce tender, flexible pancakes.
- Keep the pancakes thin: Traditional palacsinta should be delicate rather than thick.
- Use sparkling water: It can make the pancakes lighter and softer.
- Don't overfill: A moderate amount of ham and cheese makes folding much easier.
- Use medium-low heat: This allows the cheese to melt without burning the pancake.
Why You'll Love This Recipe
Hungarian palacsinta is traditionally associated with sweet fillings, but the savory version is equally delicious.
