Instructions
1. Prepare the Batter

Add the sparkling water and vegetable oil. Whisk again until the batter becomes thin and pourable.

2. Heat the Pan
Place a non-stick skillet or traditional pancake pan over medium heat.
Lightly grease the pan with a small amount of oil or butter.
3. Cook the Palacsinta
Pour a small ladleful of batter into the hot pan.
Immediately tilt and rotate the pan so the batter spreads into a very thin, even layer.
Cook for approximately 1–2 minutes, until the edges begin to loosen and the underside develops light golden-brown spots.
Flip the pancake and cook the other side for another 30–60 seconds.
Transfer to a plate and continue with the remaining batter.
4. Fill the Pancakes
Spread your favorite filling over each pancake.
For a traditional sweet version, spread the pancake with apricot jam or sprinkle it with ground walnuts and sugar.
Roll each pancake tightly into a cylinder or fold it into quarters.
