🇭🇺 Hungarian-Style Meatball Potato Bake

Ingredients

For the Meatballs

  • 500 g ground pork or a pork-and-beef mixture
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 3 tablespoons breadcrumbs
  • 1 teaspoon sweet Hungarian paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley
  • ½ teaspoon dried marjoram

For the Potatoes

  • 1 kg potatoes
  • 1 tablespoon vegetable oil
  • Salt and black pepper, to taste

For the Creamy Sauce

  • 250 ml sour cream
  • 150 ml heavy cream
  • 1 teaspoon sweet Hungarian paprika
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Topping

  • 150–200 g grated mozzarella or Hungarian-style semi-hard cheese
  • 1 tablespoon chopped parsley

👩‍🍳 Instructions

1. Prepare the Potatoes

Peel the potatoes and slice them into thin, even rounds. Bring a large pot of salted water to a gentle boil and cook the potato slices for about 5–7 minutes. They should soften slightly but remain firm enough to hold their shape.

Drain well and set aside.

2. Make the Meatballs

Place the ground meat in a large bowl. Add the chopped onion, garlic, egg, breadcrumbs, paprika, salt, pepper, parsley, and marjoram.

Mix gently until everything is evenly combined.

Shape the mixture into small meatballs, approximately the size of a walnut.

3. Prepare the Creamy Sauce

In a bowl, combine the sour cream, heavy cream, paprika, garlic, salt, and black pepper. Whisk until smooth.

The paprika gives the sauce a warm Hungarian flavor and a beautiful golden color.

4. Assemble the Casserole

Preheat the oven to 190°C (375°F).

Lightly grease a large baking dish.

Arrange the potato slices around and between the meatballs, creating an attractive layered pattern.

Pour the creamy sauce evenly over the potatoes and meatballs.

5. Add the Cheese

Sprinkle the grated cheese generously over the top.

Cover the dish loosely with aluminum foil and bake for approximately 30 minutes.

Remove the foil and continue baking for another 15–20 minutes, until the meatballs are completely cooked and the cheese is bubbling and beautifully golden.

6. Rest and Serve

Remove the casserole from the oven and let it rest for 10 minutes before serving.

Finish with freshly chopped parsley.

🌶️ Tips for Authentic Hungarian Flavor

  • Use sweet Hungarian paprika, rather than smoked paprika, for a more traditional flavor.
  • A mixture of pork and beef gives the meatballs excellent texture and richness.
  • Do not overmix the meat mixture, or the meatballs may become dense.
  • Slice the potatoes evenly so they cook at the same rate.
  • For a deeper flavor, add a small pinch of marjoram to the creamy sauce.
  • Allowing the casserole to rest makes it easier to serve neatly.

🍽️ What to Serve With It

This casserole is substantial enough to serve as a complete main course. For a traditional Hungarian-inspired meal, serve it with:

  • Fresh cucumber salad
  • Pickled vegetables
  • Hungarian pickles
  • Fresh parsley
  • Crusty bread
  • A light green salad
