Ingredients

For the Pastry

  • 300 g all-purpose flour
  • 150 g cold unsalted butter
  • 80 g powdered sugar
  • 2 egg yolks
  • 100 g sour cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder
  • 1 pinch of salt

For the Coconut-Vanilla Cream

  • 500 ml milk
  • 2 egg yolks
  • 80 g granulated sugar
  • 40 g cornstarch
  • 1 teaspoon vanilla extract
  • 80 g unsalted butter, softened
  • 80 g finely shredded coconut

For the Coating

  • 150–200 g fine shredded coconut
  • 2–3 tablespoons powdered sugar, optional

Instructions

1. Make the Pastry Dough

Place the flour, powdered sugar, baking powder, and salt in a large bowl.

Add the cold butter cut into small cubes. Rub the butter into the flour with your fingertips until the mixture resembles fine crumbs.

Add the egg yolks, sour cream, and vanilla extract.

Mix gently until a soft dough forms.

Wrap the dough and refrigerate for 30–40 minutes.

2. Prepare the Coconut Cream

Pour the milk into a saucepan and heat gently.

In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.

Gradually whisk in a little of the warm milk.

Pour the mixture back into the saucepan and cook over medium-low heat, stirring continuously, until thick and smooth.

Remove from the heat and stir in the vanilla.

Cover the surface with plastic wrap and allow the custard to cool completely.

When completely cool, beat the softened butter until light and creamy. Gradually add the cooled custard, then fold in the shredded coconut.

The finished cream should be smooth and spreadable.

3. Roll Out the Dough

Preheat the oven to 180°C (350°F).

Divide the chilled dough into several equal portions.

Roll each portion very thinly on a lightly floured surface.

Cut into even rectangular pieces suitable for making individual pastry layers.

4. Bake the Pastry

Place the pastry pieces on parchment-lined baking trays.

Prick them lightly with a fork to prevent excessive puffing.

Bake for approximately 10–12 minutes, or until lightly golden around the edges.

Do not overbake—the pastry should remain delicate.

Allow the baked layers to cool completely.

5. Assemble the Rolls

Spread a thin, even layer of coconut-vanilla cream over one pastry sheet.

Place another pastry layer on top and gently press.

Continue layering until the desired thickness is reached.

For individual rolled portions, spread the cream over the pastry and gently roll it into a compact spiral.

6. Coat with Coconut

Spread a thin layer of cream around the outside of each pastry roll.

Immediately roll or generously sprinkle each piece with shredded coconut.

The coconut should completely cover the exterior, creating the beautiful snowy appearance shown in the photograph.

7. Chill Before Serving

Place the finished pastries in the refrigerator for at least 1 hour.

This allows the cream to firm up and the pastry layers to soften slightly, creating the ideal texture.

Before serving, dust lightly with powdered sugar if desired.

Tips for Perfect Coconut Cream Rolls

Roll the pastry thinly

Thin pastry creates delicate layers and prevents the dessert from becoming heavy.

Cool the custard completely

Never combine hot custard with the butter, as the cream may become too soft or greasy.

Use fine coconut

Fine shredded coconut sticks more easily to the cream and creates a smoother, more elegant finish.

Let the dessert rest

Refrigerating the finished pastries allows the cream to soften the pastry layers and makes slicing easier.

Don't overbake

The pastry should be pale golden rather than dark brown.

Delicious Variations

Lemon Coconut Cream

Add finely grated lemon zest to the custard for a fresh citrus flavor.

Chocolate Coconut Rolls

Add 1–2 tablespoons of unsweetened cocoa powder to the cream for a chocolate version.

Apricot Coconut Rolls

Spread a very thin layer of apricot jam between the pastry and cream for a classic Central European flavor combination.

Walnut Coconut Rolls

Add finely chopped toasted walnuts to the coconut cream for extra texture and richness.

How to Store

Keep the finished pastries refrigerated in an airtight container.

They are best enjoyed within 2–3 days.

For the best texture, remove them from the refrigerator approximately 10–15 minutes before serving.

Frequently Asked Questions

Can I prepare the pastry a day ahead?

Yes. The baked pastry layers can be prepared a day in advance and stored in an airtight container at room temperature.

Can I use coconut milk?

Yes. Part or all of the regular milk can be replaced with unsweetened coconut milk for a stronger coconut flavor.

Why is my cream too soft?

The custard must be completely cooled before combining it with the butter. Also, make sure the finished dessert is properly chilled before serving.

Can I use ready-made pastry?

Yes, although homemade pastry gives these rolls a more traditional homemade texture and flavor.
