Ingredients

For the dough:

  • 500 g (4 cups) all-purpose flour
  • 200 g (7 oz) unsalted butter, softened
  • 150 g (about ⅔ cup) sour cream
  • 100 ml (⅓ cup + 1 tbsp) lukewarm milk
  • 20 g fresh yeast or 7 g active dry yeast
  • 1 teaspoon sugar
  • 1½ teaspoons salt
  • 2 egg yolks
  • 150 g (5 oz) grated cheese

For the topping:

  • 1 egg, beaten
  • 80–100 g (3–3½ oz) grated cheese

Instructions

1. Prepare the yeast

Warm the milk until lukewarm. Stir in the sugar and yeast, then leave for 5–10 minutes, until foamy.

2. Make the dough

Place the flour in a large bowl and add the salt. Rub in the softened butter until the mixture resembles coarse crumbs.

Add the sour cream, egg yolks, grated cheese, and activated yeast mixture. Knead until a soft, smooth dough forms.

If the dough feels too dry, add a small amount of sour cream or milk.

3. Let the dough rise

Cover the bowl and leave the dough in a warm place for approximately 45–60 minutes, or until noticeably puffed.

4. Create the layers

Transfer the dough to a lightly floured surface and roll it into a rectangle. Fold it into thirds, like a letter.

Let it rest for 15–20 minutes, then repeat the rolling and folding process once or twice. This step gives the Pogácsa their beautiful flaky layers.

5. Shape the Pogácsa

Roll the dough to approximately 1.5–2 cm thick.

Lightly score the surface with a knife in a crisscross pattern, then cut out small rounds using a cookie cutter or small glass.

Place the pieces onto a baking tray lined with parchment paper.

6. Add the topping

Brush each Pogácsa with beaten egg and generously sprinkle with grated cheese.

Leave them to rest for another 15 minutes while the oven heats.

7. Bake

Preheat the oven to 200°C (390°F).

Bake for approximately 15–20 minutes, or until the Pogácsa are beautifully puffed and golden brown.

Allow them to cool for a few minutes before serving.
