Ingredients
For the Sponge Cake
- 6 large eggs
- 180 g granulated sugar
- 150 g all-purpose flour
- 30 g unsweetened cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- A pinch of salt
For the Chocolate Cream
- 500 ml heavy cream
- 200 g mascarpone cheese
- 100 g powdered sugar
- 120 g dark chocolate, melted and cooled
- 1 teaspoon vanilla extract
For the Apricot Topping
- 500–600 g ripe apricots, halved and sliced
- 3 tablespoons apricot jam
- 1 tablespoon lemon juice
- 1 tablespoon water
For Decoration
- 150 g sliced almonds
- 50 g dark chocolate, finely grated
- A few whole or sliced almonds
- Optional: whipped cream for piping around the edges
Instructions
1. Bake the Sponge
- Preheat your oven to 175°C (350°F).
- Line the bottom of a 22–24 cm round cake pan with parchment paper.
- Separate the eggs.
- Beat the egg whites with a pinch of salt until soft peaks form.
- Gradually add half of the sugar and continue beating until glossy and firm.
- In another bowl, beat the egg yolks with the remaining sugar and vanilla until pale and creamy.
- Sift together the flour, cocoa powder, and baking powder.
- Gently fold the dry ingredients into the egg-yolk mixture.
- Carefully fold in the beaten egg whites without deflating the batter.
- Pour into the prepared pan and bake for approximately 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the sponge to cool completely before slicing it into 2–3 layers.
2. Prepare the Chocolate Cream
- Melt the dark chocolate and allow it to cool slightly.
- Whip the heavy cream until soft peaks form.
- Beat the mascarpone, powdered sugar, and vanilla until smooth.
- Fold the cooled melted chocolate into the mascarpone mixture.
- Gently fold in the whipped cream until you have a light, smooth chocolate cream.
3. Prepare the Apricot Topping
- Place the sliced apricots in a saucepan with the apricot jam, lemon juice, and water.
- Heat gently for 2–4 minutes, just until the fruit becomes glossy and slightly softened.
- Do not overcook the apricots; they should retain their shape.
- Let them cool before decorating the cake.
4. Assemble the Cake
- Place the first sponge layer on a serving plate.
- Spread a generous layer of chocolate cream over the sponge.
- Add the second sponge layer and repeat with more cream.
- Place the final sponge layer on top.
- Cover the top and sides of the cake with the remaining chocolate cream.
- Press sliced almonds around the sides of the cake.
- Arrange the glossy apricot slices on top in a beautiful circular pattern.
- Pipe small rosettes of chocolate cream around the edge.
- Finish with grated chocolate and a few almonds.
5. Chill and Serve
Refrigerate the cake for at least 4 hours, preferably overnight. This allows the sponge to become tender and the cream to set beautifully.
Before serving, let the cake sit at room temperature for approximately 15–20 minutes.
