Hungarian Almond Cream Cake (Mandulás Krémes Sütemény)

A Classic Hungarian-Style Cake with Almonds and a Silky Vanilla Cream

This elegant Hungarian-style almond cake is a beautiful addition to any dessert table. It features a soft, buttery cake base topped with generous layers of smooth vanilla cream, toasted almond flakes, and a delicate dusting of powdered sugar. The combination of tender cake, creamy filling, and crunchy almonds makes every bite wonderfully satisfying.

Ingredients

For the Cake

  • 4 large eggs
  • 150 g granulated sugar
  • 1 packet vanilla sugar
  • 120 g unsalted butter, melted
  • 180 g all-purpose flour
  • 1 teaspoon baking powder
  • 100 ml milk
  • 1 teaspoon vanilla extract
  • A pinch of salt

For the Vanilla Cream

  • 500 ml milk
  • 1 packet vanilla pudding powder
  • 80 g granulated sugar
  • 1 packet vanilla sugar
  • 150 g unsalted butter, softened
  • 1 teaspoon vanilla extract

For the Topping

  • 100–120 g sliced almonds
  • 2 tablespoons powdered sugar
  • 1 tablespoon granulated sugar, optional

Instructions

1. Prepare the Cake Batter

Preheat the oven to 175°C (350°F).

Beat the eggs, granulated sugar, and vanilla sugar until light, fluffy, and noticeably increased in volume. Slowly add the melted butter and milk while mixing.

In a separate bowl, combine the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until you have a smooth batter.

2. Bake the Cake

Line a rectangular baking pan, approximately 20 × 30 cm, with parchment paper.

Pour in the batter and spread it evenly. Sprinkle the sliced almonds over the surface.

Bake for approximately 25–30 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.

Allow the cake to cool completely.

3. Make the Vanilla Cream

Whisk the vanilla pudding powder, sugar, and a small amount of the milk until smooth.

Heat the remaining milk in a saucepan. Add the pudding mixture and cook over medium heat, stirring constantly, until thick.

Remove from the heat and stir in the vanilla. Cover the surface with plastic wrap and allow it to cool completely.

Beat the softened butter until creamy and gradually incorporate the cooled pudding mixture. Continue mixing until the cream is smooth and fluffy.

4. Assemble the Cake

Spread the vanilla cream evenly over the cooled cake.

If desired, add another layer of sliced almonds on top. Finish with a generous dusting of powdered sugar.

Refrigerate the cake for at least 2–3 hours before slicing. For the best texture, chilling it overnight is even better.

Serving Suggestions

Cut the cake into neat rectangular slices and serve chilled with coffee or tea. The combination of creamy vanilla filling, soft sponge, and delicate almonds makes it particularly suitable for family celebrations, holidays, and afternoon gatherings.

Tips for the Perfect Hungarian Almond Cake

  • Cool the pudding completely before combining it with the butter to prevent the cream from becoming runny.
  • Toasting the almonds lightly gives them a deeper, nuttier flavor.
  • For cleaner slices, refrigerate the finished cake thoroughly before cutting.
  • A little lemon zest can be added to the cake batter for a subtle Hungarian-style citrus note.
  • Store leftovers covered in the refrigerator for up to 3 days.
